Reggello, a symbol of Tuscan olive oil excellence, will host its first basic course on tasting extra virgin olive oil, organized by ANAPOO (National Association of Professional Olive Oil Tasters) in collaboration with the Municipality of Reggello. The course will be held at the Cascia Municipal Library starting on January 28, 2025 and will consist of five evening classes, open to all.
This initiative provides a unique opportunity to explore the entire oil production process, from olive cultivation to sensory analysis. Each class includes a theoretical part and guided tastings of oils, including samples with defects, to help participants develop sensory awareness.
Schedule of Lessons
- January 28 – Olive cultivation and the influence of cultivars on the sensory characteristics of oil. Main oil extraction systems and use of new technologies to improve the quality of olive oils. Tasting of 3 samples including a defective one
- Feb. 4 – Introduction to the principles of sensory analysis, outline of the official COI method. The vocabulary of EVO oil: merits and demerits of oils and their commodity classification. Tasting of 3 samples including a defective one
- Feb. 11 – The main Tuscan, Italian and international varieties and their sensory characteristics. What the label of EVO oil contains by law. Hints about DOP/IGP certification Blind smell test: what does this smell remind you of? Tasting of 3 samples including a defective one
- Feb 18 – From condiment to food: oil as a nutraceutical, food pairings. Recognition of positive attributes: fruitiness, spiciness, bitterness. Tasting of 3 samples including a defective one
- Feb. 25 – Guided completion of the tasting card. Recognition of the negative attributes: reheated/mildewed, rancid, raven. Tasting of 3 samples including a defective one
How to Enroll
The course has a cost of €100, payable before the start of class. For registration, fill out the online form: Registration Form. Following completion, to finalize enrollment, a payment notice of €100 will be sent by email, to be made by the start date of classes.

The course will be held at the Municipal Library of Cascia, classes start at 8:30 pm end at 11 pm.
The course will be activated with a minimum of 8 participants and a maximum of 25. Application deadline January 22, 2025.
